First Friday - March
Happy First Friday, I am beyond excited for March! I feel like we just have to make it through this month and we are on our way to warm days.
Cocktail
This month I am making a Cucumber Tom Collins. There are quite a few cold days ahead, possibly even snow, but I want something fresh, reminding me spring is right around the corner. This is the perfect cocktail for just that.
Make Ahead: Simple Syrup - combine equal parts sugar and water in small saucepan and simmer until sugar dissolves. To make this sugar-free I used Monkfruit Sweetener.

Servings: 2
Ingredients:
2 oz Gin
1/ 2 Cucumber, peeled and diced
3/4 oz Lime Juice
1/2 oz Simple Syrup
Ice
Club Soda
Lime Wedge
Cucumber Slice
To make: Fill your glass with ice and set aside. Muddle the diced cucumber in the bottom of a cocktail shaker, add gin, lime juice, simple syrup, and ice to the cocktail shaker, cover and shake until chilled. Stain into your glass filled with ice, top off with club soda and garnish with a lime wedge and cucumber slice. Cheers!
